Recipe: Super Sweet Potato & Apple Pupcakes

Let's get cookin!
Ingredients:

1 1/2 cups flour

3 tablespoons rolled oats
-
3 tsp baking powder
-
1 cup sweet potato, peeled and diced

1 cup unsweetened applesauce
-
2 tablespoon honey
-
2 tablespoon coconut oil
-
1 apple, grated finely
-
2 eggs, beaten
Icing:
-
¼ cup Peanut Butter
-
¼ cup Cream Cheese
-
Daily dose of Super Skin & Coat - as per the weight guide on pack
Instructions:

Preheat the oven to 180°C.

Steam or boil the sweet potato, then mash or puree.

In a large mixing bowl, combine the pureed sweet potato, grated apple, applesauce, honey and coconut oil.

Stir through the beaten egg, then add the flour, baking powder and oats and mix to combine.

Spoon the mixture into greased or lined cupcake pans.

Bake for 15 minutes, or until a skewer comes out clean.

Once the cakes are cool, make the icing by beating together the peanut butter and cream cheese, then stirring through your pup’s dose of Super Skin & Coat.
Let your pup enjoy!
Tip: Cut the cake in half before serving – some pups tend to gulp the whole cake down in one!
